Trying to get my Samsung Captivate running a Jellybean ROM.

Yes...many. it's incredibly easy, and only gets easier with each new phone and tablet. I think I had my nexus for about 3 hours after I bought it before it was rooted and rommed.

I have run many roms, cm, aokp, miui, etc... I am running CM9 currently.

I used Cyanogen Mod back on droid 2.4.

It was VERY easy to install and worked great. Very few bugs. Very refined OS. Highly recommended if you're planning on using a 3rd party ROM.

Now I just root and use the stock one. They've incorporated enough features now that I dont see the need for it anymore.

I'm currently running CM10 on my Galaxy Nexus.

It's fairly easy to flash a custom ROM. You just need to flash a compatible recovery image first (grab the latest clockwordmod recovery).

Check this out. Google a tutorial if you're not sure how to root your phone.

Yeah, if you're using a Nexus device (like I am) or something that runs stock Android, it's not really necessary any more. I still use CyanogenMod, though, because I get better battery life, as it's essentially just a stripped down version of the stock firmware.

It's a necessity (imo) if you're using a device whose stock firmware has an overlay (TouchWiz/Motorblur/HTC Sense).

RIGHT! Do NOT forget to make a full Nandroid backup of the system before doing anything! If you should somehow lose power of otherwise shut down the phone while flashing the ROM, it will be bricked if you dont have a backup.

As Mr. Gates said, Clockwork is one of the better utilities. Very easy to use with plenty of guides available online.
