Yes, I'm the guy who had the Flood admit to being furries.

Just wondering what to go with, I actually already have a Knight shield at +7, but before I use titanite any further, what else is good? On my first character I used the Baldur Shield and the Silver Knight Shield a lot, but I can't recall the stats (and I prefer not to use the silver knight shield just because I have my first character uses it the most).

So basically Baldur vs Knight shield or what else does Flood suggest?

What about that grass crest shield that recharges Stamina?

Grass Crest is good for that reason but is best for a mage or sorcerer build, as a magic user will need to run and roll quite a lot, the shield itself doesn't have very good stability. It could come in useful when two handing however. Maybe I'll upgrade it but not for my main shield.

I'm 90% sure that the Balder shield has the highest stability of all the medium shields.

I think it's best for melee builds, for obvious reasons.

Balder for stability. Grass crest for stamina perk. Sanctus for passive healing effect. Crest for magic block. And lastly, Black Knight for fire block.

Pretty much this.

Proud Spartan II, COG soldier, Hero of time, and crowbar wielding scientist.

The balder shield is the best, but make sure you switch your shields according to the environment. Such as fire resistant shields in fiery areas, etc.
