Subject: Does forgotten memory change our brain?

So, I believe that it is proven that every new idea, skill, memory, or whatever in our brain changes the physical matter, (wrinkles) in our brain. Does this mean that having a short term memory that is there and then gone in a week actually changes how we think?
The change would happen when we get the memory, so would it go away once we forget it? But if it went away, some other parts of the brain have molded around since then, so does that mean that it changes to something completely different when we forget it?
My apologies if this makes no sense.

Memories are stored in our brains forever, it's access to them that we don't have.

that's one theory. I do believe it hasn't been proven yet; as is the theory that memories disappear.
