The glitches, sword lunge tricks, three-hit melees, honor rules, mods, clans, and open mics.
Let me elaborate:
The glitches ranged from getting your body stuck into the sky, getting out of the map entirely, to super bouncing. They were very fun and it is thrilling to get out of bounds and into an area where you are not only free to roam but also free to explore pretty much uncharted lands. It added a whole other element to the game and the game really benefited from it.
The sword lunge tricks ranged from using it to get to hard to reach areas to being a flat-out tactical advantage positioner. Was pretty fun, still possible in Halo 3 actually. (Lunge then change weapons.)
Three hit melees meant that it was uncommon to just walk right to the enemy. You could also melee your teammates without messing them up that badly and could do it chastisingly.
The honor rules taught discipline and attention to detail. As the host it was your job to kick everyone that died by a zombie (green team), and as a player it meant you did not be a dick or you'd get kicked. Period.
Mods meant stuff was fun as hell. From playing in hover-seats (the thing the prophet was riding in the campaign), to donkey kong, to race maps. The reason why Halo 3 had forge and so many custom game settings was due to how popular mods were. You could even play more than one round with a mod due to a specific setting. I'll never forget the "triangles of death" glitch things. Walk into one and your player just dies, I've still got no idea why they appear.
Clans meant you could always get in a customgame. XBL even used some of the features in its Friend lists. Some clans were serious, while others were fun. All in all, they brought people closer together just enough to have an impact of varying degrees.
Open mics meant that if you had a mic you only had the option to talk to everyone in the game. This has obvious benefits and problems.
