I used to work at McDs. Everything is frozen. Meat is like a hockey puck that cooks in 15 seconds depending on the size of the patty. The food is kept in a heating cabinet which is supposed to replaced between every 15 minutes and 1 hour. Most Mcdonalds leave the food in for a lot longer. Fries should also stay under the light for about 13 minutes then get replaced but because of food cost they keep the fries longer and so the customer complains about soggy, nasty fries.

A lot of times the grills are not cleaned after each use. The teflon on the top grill can have meat that is from 1pm on it and you just ordered a burger at 7pm. The trays are supposed to be soaped, cleaned and sanitized. A lot of places just wipe the trays without sanitizing and put them back up front for customers to use. Salads should only be kept for 8 hours but a lot of times they will just change the time of the sticker instead of remaking the salads. Same thing with parfaits.
