That's the thing.
I am for -blam!--blam!- rights. If my state had ballot initiatives, I would vote for LGBT rights 10 times out of 10. I have zero problem with black people nor any racial, economic, or cultural minority and never have. I'm not just saying I'm not a bigot. My views and ideals hold true to that statement.I think the main problem with her handling of you is that she seems to see bigotry as a Boolean concept. Either you are a bigot or you aren't. The truth is, obviously, not so simple. There are several shades of grey between the two states, and she doesn't seem to be willing to acknowledge that.
Take your hypothetical for example. Someone who innocently says the n word when asked "What rhymes with bigger?" isn't someone who necessarily is far along down the bigotry spectrum (certainly insensitive and impulsive, though. I would have gone with "trigger" were I in that stead.) Jay is, not surprisingly, concerned, and would be wise to inform you that doing such a thing is insensitive and slightly bigoted. She, however, chooses to label hypothetical you a bigot in this situation. You respond that you have many black friends and don't treat them any differently, which, if true, would be evidence that you aren't as bigoted or malicious as she assumed, merely clueless. She, like I said before, doesn't seem to want to acknowledge that, and ignored it and simply called you a racist again. (And frankly, based on her language at that point, I'm not certain she was only talking about hypothetical you anymore.)
