Because people don't see all the evidence OP, especially not in an all encompassing manner. They see bits of the total theory and as such it seems far-fetched.
Because people don't want to believe in the Illuminati.
Because people are close minded.
Because initially it sounds absolutely ludicrous.
Because without all the evidence it is ludicrous.
Because there is a lot of 'evidence' that could just be coincidence, even though when mounted it becomes more and more ridiculous not to believe.
Because the average sensible person wouldn't believe in the Illuminati, rightly so, and as such intelligent people would generally feel inclined not to believe.
Also, how realistic does 'secret organisation that controls the world' sound to you? Not very, even if it's true it's very understandable that the uninitiated wouldn't believe. Only stupid people or people who've researched the Illuminati believe.
