If the trucks can't hit the UNSC, and the UNSC can't hit the trucks. I'm guessing it would be a stalemate and sooner or later they would team up to destroy the precursors.

Big Rigs trucks doesn't even have to hurt the UNSC. They will just ram in the planets of the UNSC and all the planets will be destroyed.
