The meat thread got me thinking about steak, and I was wondering, what's the best way to cook it? Whenever I cook a steak, it comes out either 1) dry 2) tough or 3) both. What's the best cut and what's the best way to cook it?

If it is coming out tough and dry, you're cooking it too long on too high of a temperature. Simmering in cooking wine or oil are usually the ways that I cook steak. Wine if you're going for a more thorough cook and oil if you're going for some quick color and not much doneness.

You can always score the meat first and then marinade it so it absorbs more marinadeness.

Slow over low heat.

Remove from heat when it is about as tough/resistant as the flesh between your thumb and pointer.

Let sit for 5 minutes, cut into 1/2 inch slices.

The cut has a lot to do with dryness and toughness. I prefer a Ribeye due to it's marbling which makes it really tender and juicy.

I rub each steak with Worcestershire and soy sauce, then sprinkle on McCormick Montreal steak seasoning. Let rest until room temperature, then grill over a medium high heat until rare (120-125deg)

Never cook beyond medium imo.

Once cooked, LET IT REST FOR FIVE MINUTES BEFORE EATING. seriously.

Well, here we are. I guess that it was destined to come to this.

Hot flame (if not wood fire and coals, then gas) that is capable of getting cast iron to nearly read hot. Properly seared beef has a taste that is indescribable. If the heat is sufficient it is possible to have a serious score/branding or the surface and then cook it from rare out to mid-rare. If the customer asks for well done? Cook it to mid-rare and let it sit in the Au Jus for the Prime Rib. They will wonder how you got it cooked completely through and kept it juicy.

i usually marinade it in ketchup for a few hours and then pop it in the microwave until well done

What I like to do is get some nice Ribeyes from a trusted butcher, or place with known quality for meats (like Costco). I then stab each steak with a fork on both sides until there's noticeably less resistance against the fork. From there, I rub them with freshly pressed garlic and ground pepper on both sides. Grill until medium rare and let it sit for at least 5-10 minutes before eating.

It may be simple, but it always produces amazing steaks. No steak sauce needed whatsoever.

Letting it sit out is an important part.
It's not meant to let the meat cool down, it's meant to allow the meat time to re-absorb its juices.
