The Wheel of Time, by Robert Jordan and Brandon Sanderson is easily at the top of my list. Be prepared however; Fourteen books at ~900 pages each is pretty time consuming.

Ender's Game/Ender's Shadow
Both teach you quite a bit about self and world OP, and are also amazingly written on top of that. It's a good recommendation.

The books in the Space Odysseus are also pretty mind boggling, and really make you think about like and the meanings behind our own existence.

A Song of Ice and Fire, well... That's just some of the best storytelling I've ever read. Incredibly immersive.
