In the Covie vs Humans mod...
If the teams were actually seperated into only-covie weapons, and only-human weapons, the team with only human weapons will always be victorious, unless something ridiculous happens. (for ex: the human teams all have long range weapons, like pistol and sniper rifle, while covie teams only have short ranged, not-so-useful-in most-cases weapons) So I think that mod's sort of unfair.
The mod is actually quite balanced: Both teams spawn with a M6D (thank goodness!) and the only other long range weapon is located somewhere in the middle of the map, where both teams have a chance to get to it.
If the mod was strictly Human vs. Covenant, I never would have posted it, because it would be unbalanced and unfun. I'm glad it's not that way at all.

No, I tried it in the demo. Didn't work. Gave me that good ol' "BEEPBEEPBEEP!" noise whenever I selected Blood Gulch.

I've found the problem. I redownloaded it to see what was up, and I figured it out.
The map comes named as bloogulch.map and you need to rename it as bloodgulch.map
